The organoleptic properties of Coratina olive oil
Coratina oil is yellow-green in color with golden reflections, with a bitter and spicy flavor given by the very high concentration of polyphenols, excellent antioxidants for the well-being of the body. Among these, it is very rich in oleuropein , the polyphenol that causes the oil to have a bitter aftertaste.
The quantity of polyphenols is an asset for the oil itself as it promotes its conservation and protects it from peroxides, chemical compounds that accelerate the oxidation and aging process. Coratina oil also boasts the highest level of oleic acid which counteracts bad cholesterol.
