Oil of Italian origin obtained from olives selected in the countryside of Terlizzi and surrounding areas (province of Bari). The oil comes from a selection of "Coratine" olives, harvested in the right ripening period.
APPEARANCE AND ORGANOLEPTIC PROFILE
COLOR:ย olive green with yellow tones.
ODOR:ย fruity of green olive, enriched with herbaceous, artichoke and almond notes.
TASTE: particularly aromatic, with rather fruity and deep flavours, but also a bitter and, albeit slightly, spicy aftertaste.
PRODUCT PROCESSING METHODS
The pressing of the olives takes place cold, a mechanical process, during which the temperature of the olive paste is constantly measured through probes which guarantee its maximum limit. This process guarantees the preservation of all the organoleptic properties and chemical-physical characteristics of the oil, avoiding possible oxidation.
